Vegan Almond Praline Cake | Aromatic Vanilla Cake

Across the holidays I prefer to make sweet, issues like peanut brittle and almond praline brittle are one among my husband Eric’s favorites! I made some almond praline brittle final weekend, as a result of I believed it sounded good, then I thought of how good it may be as a component of texture included in a cake!  It’s so scrumptious and flavorful, like crunchy almond vanilla scented caramel.  So I made a decision to make a Vegan Almond Praline Cake!

I already had the almond praline made.  It’s actually easy, you simply soften sugar and add almonds, salt and vanilla and also you get probably the most scrumptious crunchy sweet as soon as it hardens!  Subsequent, for the cake, I made my traditional vanilla cake recipe with almond added and I knew it could be good with the almond praline! I used complete wheat pastry flour for my cake batter however if you happen to like to make use of all objective flour that will work as effectively.  Or perhaps a gluten free flour mix like Bob’s Crimson Mill gluten free all objective baking flour (which I’ve used earlier than and know works for a recipe like this).  Whereas I usually use avocado oil in my truffles on this one I occurred to make use of almond as a result of we had some readily available. I believed I’d as effectively preserve with the almond theme.  These truffles all the time odor so heavenly whereas they bake!

For the frosting I made a easy vanilla buttercream.  That is actually my favourite frosting and my go too frosting as a result of it’s so straightforward to make and all the time tastes so good.  I used Earth Stability sticks this time.  I’ve been making this frosting recipe so lengthy that it’s truly from the non-vegan one my Grandma taught me, after I went vegan I simply swapped the butter for vegan butter and it tastes simply pretty much as good!  I saved the frosting easy as a result of I knew I’d be together with the praline on high of the cake and within the center layer. I chopped up a few of the praline to place within the middle layer of the cake and it labored out good!

I couldn’t wait to attempt the completed cake!  Even Eric wished to attempt a chunk as quickly as I used to be carried out taking my photographs of it and he is not a giant cake particular person like me. It was so scrumptious!  Candy, smooth vanilla almond scented cake sandwiched along with luscious vanilla buttercream, and crunchy almond praline! I’m in love with this combo!  In case you are within the temper for one thing candy, undoubtedly give this Vegan Almond Praline Cake a attempt!

Cake:

  • 1 1/2 cups natural whereas wheat pastry flour or all objective flour
  • 3/4 cup plus 2 Tbsp granulated sugar
  • 3/4 tsp baking powder (1/2 tsp plus 1/4 tsp)
  • 1/2 tsp sea salt
  • 2 flax eggs (2 Tbsp golden floor flax seed blended with 1/4 cup plus 2 Tbsp filtered water, allowed to sit down quarter-hour)
  • 1/4 cup plus 2 Tbsp almond oil or different impartial oil
  • 1/2 cup plant primarily based milk
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp almond extract

Almond Praline:

  • 1 cup granulated sugar
  • 1/8 tsp sea salt
  • 2/3 cup chopped almonds
  • 1 tsp pure vanilla extract

Frosting:

  • 1 1/2 cups vegan butter, I used Earth Stability (at room temperature)
  • 3-4 Tbsp oat milk (I used Oatly, however you need to use what you favor), add 3 then if wanted add one other if frosting comes out too stiff
  • 1 tsp pure vanilla extract
  • 1/2 tsp pure almond extract
  • 4 cups powdered sugar

Directions:

  1. Preheat oven to 350F levels, and line 2 6 inch spherical cake pans with parchment on the underside and oil the perimeters.
  2. In a big bowl, mix the flour, sugar, baking powder and sea salt and whisk to mix.
  3. Add the flax eggs, avocado oil, oat milk, and vanilla and beat with an electrical mixer for a couple of minute (or 3 minnutes if doing it by hand with a whisk).
  4. Pour the cake batter into the ready pans, dividing evenly between them.
  5. Place the truffles within the oven and bake for about half-hour till the truffles are carried out within the middle (you’ll be able to insert a toothpick into the middle and it comes out nearly clear with a couple of moist crumbs).
  6. Take away from the oven and let cool 20 minutes, then take away the truffles from the pans by slicing across the sides, putting a plate on high then inverting it and tapping on it.  Enable them then to chill fully as soon as they’re out of the pans.
  7. To make the praline, in a non-stick pan, soften the sugar and salt till fully clean and liquid over medium warmth (this could take about 5 minutes), add the almonds and vanilla (it’ll foam barely so watch out), stir till blended in effectively, then pour onto a sheet of parchment or foil and permit to chill fully.  As soon as it has cooled, break into small items
  8. Chop up about 1/3 cup of the brittle to smaller items and save the remainder for adorning the cake (and consuming).
  9. To make the frosting, beat the butter with the milk and vanilla till fluffy.
  10. Add the powdered sugar 1 cup at a time, and beat till fully blended and lightweight and fluffy (if the frosting is simply too stiff add that different Tbsp of milk).
  11. When able to frost, Place one cake layer on a plate, unfold about 1/2 inch thick layer of the frosting over it, then high with the chopped brittle.
  12. Unfold a skinny layer of frosting on what would be the backside of the opposite cake layer, then place on high of the brittle.
  13. Unfold the remaining frosting on the highest and down the perimeters of the cake evenly, then place the remainder of the frosting in a pastry bag and use it to embellish the highest and the remaining brittle items.  This frosting recipe makes sufficient that you need to be capable to do some beneficiant piping decorations on high, as a result of I like quite a lot of frosting!
  14. Serve the cake and luxuriate in!
