Simple salads are the hero of summer time consuming and this one takes benefit of scrumptious Isle of Wight heritage tomatoes. With simply 5 components and three steps to cut, assemble and costume – it is a cinch!
This recipe employs the smacking acidity of pink wine vinegar to convey out the sweetness of the British-grown tomatoes.
Serve alongside a roast, barbeque or your favorite vegetable grill.
Components
- 1 shallot, finely chopped
- 2 tablespoons pink wine vinegar
- 400 g blended heritage tomatoes
- A small handful of parsley, roughly chopped
- Salt + freshly floor black pepper
Methodology:
- Combine the shallot with the pink wine vinegar and remaining olive oil and put aside.
- Roughly slice the tomatoes so that you get plenty of completely different sizes and shapes. Season with salt to attract out the flavour.
- Costume the sliced tomatoes with the shallot & vinegar combination and sprinkle over the roughly chopped parsley
