Nigel Slater’s recipe for minced turkey with pappardelle | Meals

Peel and finely chop 2 medium-sized onions. Heat 3 tbsp of olive oil in a pan over a average warmth – I exploit a nonstick frying pan 24cm in diameter – then stir within the onions and prepare dinner for 10-12 minutes stirring frequently, till smooth and pale gold.

Peel 2 cloves of garlic, mash to a paste and stir into the onions. Utilizing a pestle and mortar or spice mill, roughly crush 8 juniper berries, 1 tbsp of thyme leaves, 1 tsp of sea salt and 6 black peppercorns and stir into the onions. Finely chop 2 sage leaves and a pair of anchovy fillets, then finely grate the zest of a small lemon and stir all of it collectively. Add a handful of chopped parsley. Proceed cooking for five minutes, then take away every thing to a bowl.

Return the pan to the warmth, pour in 1 tbsp of olive oil and switch up the warmth to excessive, then crumble 500g of minced uncooked turkey meat into the pan, spreading it out in a skinny layer. Let the meat prepare dinner for 5-7 minutes, till it’s flippantly browned, then stir and proceed cooking for 3 or 4 minutes till all is properly colored. Decrease the warmth to medium.

Whereas the mince is simmering, convey a deep pan of water to the boil, salt it generously, add 200g of pappardelle or different ribbon pasta and prepare dinner to al dente.

Return the seasoned onions to the pan, then pour in 75ml of white vermouth, let it come to a bubble, then decrease the warmth and go away to simmer for five minutes. Test the seasoning. Drain the pasta and toss with the turkey. Sufficient for two.

Minced pork is a chance right here, too. The seasonings and cooking occasions will stay the identical.

You can also make this into a fast ragu sauce by including a tbsp or two of plain flour to the mince and onions earlier than including the vermouth and 250ml of fine inventory. Let it simmer for quarter-hour earlier than tossing with the pasta.
