One Pot Taco Tortellini

Components
- 16 oz tortellini
- 1 can black beans
- 1 can corn
- 1 medium tomato, diced (or 1 can diced tomatoes)
- 1 packet taco seasoning of alternative
- 1/2 cup cheddar cheese
- 1/4 cup Greek yogurt (or bitter cream)
- 1/4 cup marinara sauce
- tortilla chips, for dipping/topping
Directions

Rinse black beans and mix beans, corn, tomatoes and taco seasoning in a bowl.

Deliver salted water to a boil in a medium pot. Cook dinner tortellini for about 8 minutes, or in accordance with directions.

As soon as tortellini is cooked, drain pasta water and add black bean corn combination to the pot with tortellini.

Add in shredded cheese and blend. Combine in Greek yogurt or bitter cream and marinara sauce and stir.

Serve heat, and high with tortilla chips and avocado.
