ZA’ATAR ROASTED CARROTS WITH CHOPPED PISTACHIO RECIPE — a vegan meals images and styling weblog



ZA’ATAR & MAPLE SYRUP ROASTED CARROTS RECIPE

INGREDIENTS FOR THE CARROTS

500g thick (vegan) greek yoghurt

juice of 1/2 a lemon

arils of 1/2 a pomegranate

a pinch extra of za’atar

10 leaves of recent mint and/or parsley roughly chopped

a splash of olive oil

INSTRUCTIONS

Preheat the oven to 200C/390F

Place the carrots in a big (excessive rimmed) baking tray. Cowl the carrots with the olive oil, maple syrup, za’atar, salt and pepper and toss totally till the carrots are evenly coated.

Roast for 25-Half-hour, or till the carrots begin to brown.

While the carrots are within the oven, mix the greek yoghurt, lemon juice, salt. Style and regulate seasoning to your liking.

Unfold the yoghurt on a platter, prime with the nice and cozy carrots after which sprinkle over some chopped pistachio, pomegranate arils, some extra za’atar, recent herbs and a splash of olive oil.

Serve instantly with heat flatbread or as is!
